I've tried several Nice Cream recipes before, but I've never enjoyed them as much as regular 'ole ice cream. Thing is, on my quest for better health, I knew I needed to ditch the ice cream and gelato and go for something healthier, but I didn't want to compromise on taste. So, I experimented. After many failed attempts I think I've perfected my recipe and now I want to share it with you! There's a secret ingredient... and it's vegan!
What's the secret? Adding a 1/4 of a cup of So Delicious Vanilla Ice Cream (or any vegan ice cream). I had some in the freezer, and it wasn't all that interesting... I even tried adding stuff to it, and it was pretty tasteless to me, BUT I decided to add it to the one Nice Cream attempt and it worked perfectly.
Cacao Mango Nice Cream
- 2-3 Frozen Bananas
- 3 Tbsp of So Delicious Vanilla Coconut Ice Cream
- 1/4 Cup of Coconut Milk
- Add 1 Tbsp organic vanilla extract.
- Add 2 Tbsp of cacao powder.
- Add 2 more Tbsp of So Delicious Vanilla Ice Cream.
- Add 1-2 Tbsp of coconut sugar.
- 1/2 a Mango (or fruit of choice)
Once blended well, place in a container and let refreeze a bit. Top with (or mix in before putting it in the freezer) raw cacao nibs.
Before enjoying, I suggest taking this out of the freezer for about 8-10 minutes and letting it soften a little after it has been fully frozen. I’ve found that by adding the coconut ice cream to the bananas helps it keep a more ice cream-like consistency. That’s always been my biggest annoyance with Nice Cream- consistency, and by adding a little of the coconut ice cream in addition to the coconut milk helps solve that problem!
This is seriously the best Nice Cream I've ever made. Love it! Give it a try, it's healthy and really delicious. Play around with fruit options, too. This is just one I happen to love, but you can add strawberries, blueberries, pineapple (another favorite), blackberries, or any fruit you'd like.
