Ok, so I didn't really follow the recipe at all that Goya suggests, but I'm always modifying recipes, so this should be no surprise.
Goya Recipe:
1/2 lb Goya dry lentils
2 Tbsp. olive oil
1/4
1 small onion, chopped
1 stalk celery, chopped
1 clove garlic, minced
1 Goya
4 cups water
salt and pepper to taste
My Recipe: (I believe in a more logical order)
4 cups water
1/2 lb Goya dry lentils (or any brand)
2 Tbsp. olive oil
2 Roma tomatoes, chopped
1 zucchini, chopped
1/4 a large onion, chopped
a dash (to taste) of:
- salt
- pepper
- Cajun seasoning
- paprika
- dill
Tip: Check the soup often to make sure you don't need to add water, and if the lentils aren't tender and you're boiling all the water off, just add water.
I can't recommend time because I have a gas stove, and time is never correct on anything with a gas stove, but just check it periodically over the course of about an hour.
To serve, place soup in a bowl, add fresh chopped chives, and enjoy!

ReplyDeleteOh, you should! It's so good! I made some tonight actually. You also can wrap some up like a burrito, put some hot sauce on it, mmmmm! I love lentils if you couldn't tell... haha.
